Award-winning restaurant Akira Back Singapore has introduced its newly minted Chef de Cuisine, Chanik Chang, along with a newly refreshed menu that promises bold flavours along with signature Korean influences. Under Chef Chang’s watchful eye, these modern Japanese reinventions pay homage to Chef Akira Back’s flavour profile across 12 restaurants worldwide.
For the uninitiated, Akira Back Singapore has showcased modern Japanese cuisine with Korean accents and culinary influences from around the world, culminating in innovative dishes centered around authentic produce and artisanal ingredients.
Chef Chanik Chang now pushes the envelope with a series of progressive dishes like the Crispy Octopus, a colourful dish that is truly a feast for the eyes (and your belly). Introduced into Akira Back’s selection of Hot Sharing Plates, the deep-fried tempura-battered octopus promises to be a flavour bomb with the help of salsa verde and red chipotle.
A selection of Akira Back dishes has undergone a facelift in pursuit of progressed mastery that utilises bona fide produce. The list of refreshed signatures include: the A4 “Tochigi” Striploin with smoked applewood, Toro Caviar with kochujang miso and oscietra caviar, AB Wagyu Tacos & Spicy Tuna Tacos, as well as the Eggplant Miso for vegetarians.
