Now, the modest trattoria operator seeks to amplify such excellence with its latest venture, Da Paolo Dempsey Restaurant & Bar.
Focusing on an all-day experiential dining concept, the lush 5,000 sq ft location unifies a restaurant, cocktail bar and retail zone. Hence, no obstacles from points A to B.
The home-grown brand keeps within the family. Taking over the reins from their parents, second-generation restaurateurs—siblings Andrea and Francesca Scarpa and the latter’s husband Guillaume Pichoir—channel the Scarpa’s family home in south Italy by imbuing the space with the Mediterranean vibrancy of sun and sea. Such details can be found in Da Paolo Dempsey’s décor.
Elements such as multicoloured majolica tiles, terrazzo tables, olive trees and a striking Campari mural captivate guests and uplift spirits. Speaking of which, time for an aperitif. No Italian meal is ever without one. So, begin with the locally inspired Always Corny, a mellow bourbon-paired sweetcorn pandan medley, or Land of Arugami, a refreshing yuzu-grapefruit vodka and Cointreau combo.
Da Paolo prides itself on its made-to-order pizzas, handcrafted pasta and house-made gelatos. Led by group executive chef Andrea, a delectable feast is to be expected. Gran Antipasto allows diners to sample the chef’s selection of cold cuts and cheeses, toast, fruits and nuts.
All Naples-style wood-fired pizzas are worth exceeding your carb quota for. But dive headfirst into Spilinga and 8 Cheese flavour. The former showcases the brand’s homemade tomato sauce prepared with Italian tomatoes alongside spicy salame calabrese, ‘Nduja and mascarpone, while the latter features the chef’s selection of eight kinds of cheese accompanied with smoked date cream and truffled honey. The cheese selection changes daily, thus prepare for a surprise.
Pasta purists will enjoy Carbonara Calabrese and Spaghetti al Nero di Seppia (aka cuttlefish ink pasta) as both classics instil comfort through Da Paolo’s hearty rendition. Adventurous diners, give Gorgonzola Ravioloni a taste. Egg pasta in baby spinach and leek crème is drenched in a blue cheese-based sauce.
On the sweet end, the Sicilian-pistachio topped Tiramisu and Valrhona chocolate flourless cake is able to round up any meal perfectly. In a rush? Grab a gelato scoop or two from the 18 flavours offered.
Before leaving, stock up on hosting essentials such as cold cuts, cheese, wine, fresh pasta and their accompanying signature sauces. Specialities include a cheese soaked in whisky and malt, high-quality San Daniele Ham and the freshly made Wood-fired Sourdough Bread. This way, you can live la dolce vita at home too.
