So you've decided to skip breakfast and catch up on sleep using weekend mornings. Definitely well-deserved after a hectic yet productive weekday. But remember to make it in time for brunch. This nourishing meal will certainly sustain you throughout an exciting weekend schedule.
Super Loco, one of Singapore's popular Mexican food names, realised its importance and hence devised an updated brunch menu that focuses on vitality via superfoods commonly used in Central South America cuisine. Developed by The Loco Group’s Culinary Director Chef Jason Jones, familiar traditional Mexican dishes embraced hearty ingredients.
“Having consulted with a nutritionist, we started to rediscover the many nutritional values from superfood ingredients that we were already using in our pantry, demonstrating the extensive versatility of these ingredients and elevating brunch favourites with healthier alternatives,” explained Jones.
The Space
An anchor establishment at Robertson Quay, Super Loco is modelled after the Mexican-inspired 'Cocina Y Bar'. Think a spacious indoor layout with coloured geometric tiles and airy alfresco zone. Also, the warm neon and fluorescent lights radiate a fun, festive and casual environment.
Must-try
Does guilt prevent you from ordering Chicken and Waffles? Enjoy Super Loco's tasty version with ease thanks to the gluten-free Fried Chicken and Blue Corn Waffles. Touted to have a lower glycemic index value, this specific maize variety also contains more protein than its yellow counterpart that'll satiate hunger. Alternatively, swap out the meat with a vegan-friendly option of coconut sorbet topped with blueberries, candied pecans and agave which gives you an energetic boost of antioxidants.
The Corazon Bowl is another ideal brunch pick due to its quinoa, lentils and chickpeas combo. Topped with the Vitamin C-loaded pomegranate seeds, this dish is packed with polyphenols and powerful antioxidants that benefit cardiovascular health and improves reparative properties.
Drink up nutrients in a jiffy with Super Loco's smoothie creations such as the Açai and Blueberry concoction. This blend can quench thirst effectively and provides a nutritious boost. Otherwise, those into rich flavours can opt for the Espresso, Cacao and Almond Butter Smoothie. Choose this power-packed drink to fuel your senses via its bittersweet taste profiles.
The Star
Taco Jack proved to be versatile and as the jackfruit surprises as a delicious meat replacement. The smoky sweetness of pulled spiced jackfruit accompanies impeccably the creamy avocado and jalapeño slaw, making it a delightful bite.
No brunch would be complete without eggs. So Huevos Rancheros takes on the lead role in providing a wholesome fare with cheese quesadillas topped with fried eggs and drizzled in a savoury medley consisting salsa roja, guacamole and sour cream. The accompanying side of frijoles in Super Loco's signature salsa perks up the dish too. Also, we're hooked onto the specially made Loco Hot Sauce which ranged spiciness levels from habanero to jalapeño.
